Savory Celebration is excited to be offering Sous Vide cookery 101.  What is Sous Vide you ask?  The short answer is that it is a healthy and simple technique of cooking meats and vegetables that allows you to preserve the full flavor of the food.  You can create some of the most delicious and perfectly cooked meals with minimal effort and laser focused consistency. 

Sous Vide is a method of cooking that many high-end restaurants and caterers use every day. It's where you vacuum seal your product in a vacuum bag and cook it in a temperature controlled water bath for a specific amount of time.  Not only does this allow you to make meal sized portions that store for weeks at a time, but it's super easy on clean up and a breeze for anyone to use.  

 

During Sous Vide 101 you will learn:

  • Properly cook tough vegetables, as well as delicate vegetables.
  • Learn the differences between cooking meat, poultry, and fish.
  • Utilize the low temperature cooking to make braising tough cuts a cinch.
  • Proper packaging techniques for different products.
  • Time and temperature for every protein, vegetable, and starch you may face.
  • Finishing techniques for your product once cooked.

 

Menu:

  • Chicken Breast with Sweet Pepper Tapenade, Sweet Corn and Leek Purée, and Balsamic Glazed Red Pearl Onions
  • Beef Tenderloin with Fingerling Potatoes, Baby Carrots, Asparagus, and Béarnaise Sauce
  • Citrus Glazed Salmon with Summer Squash, Baby Sweet Potatoes, Radishes and Arugula
  • Vanilla Crème Fraiche Ice Cream with Candied Peaches and Streusel Crumbs
